Chilli bread

USE DISPOSABLE GLOVES TO KNEAD THIS DOUGH

This recipe is made with white flour but can be made with other types too.

Put 500 grams of strong white flour and 1 teaspoon of salt into a large bowl and mix the salt through with your hands.

Add 1 teaspoon of sugar and 2 teaspoons (7 grams) of easy yeast and mix with your hands.

Rub in 15 grams of butter or block margarine and then make a well in the centre and pour in 300 millilitres of warm water (mix 100 millilitres of hot water with 200 millilitres of cold) in which you have mixed half a teaspoon of  Scorpion Psycho Juice. 

Mix it with a fork or a hand mixer with dough hooks attached. Dump it on a floured work top and knead for about 6 minutes or until it is smooth and elastic.

Play some music while you do it as it helps get a rhythm set and makes the time go more quickly. If the dough begins to stick then oil your hands a little. Put the kneaded dough in an oiled bowl and place a piece of oiled cling film over the top. Leave it in a warm place for 45 minutes or so and it will have doubled in size.

Turn it out onto a floured work top again and knock back to it’s original size by pressing it with your fingers. Shape the dough roughly so that it fits into a 2lb loaf tin, cover with a clean tea towel and leave it in a warm place for 45 minutes or so when it should have doubled in size.

Sprinkle the top with flour or, if you feel you’re brave enough, Psycho Spice. Bake the loaf in the middle of the over on 230 C for 15 minutes then turn the heat down to 200 C and bake for a further 15 minutes. If the loaf is done you can make a knocking sound if you rap the bottom of the loaf with your knuckles. Cool on a wire rack.
