Double Baked Potatoes

A double baked potato is quite simply but can taste quite spectacular.

Wash a potato (or several if you’re feeding the family) then prick it several times with a fork and put them in the oven to bake on 180 c for about 90 minutes. Don’t put them onto a tray as they’ll cook much more evenly if they’re on the oven rack.

Once they cooked scrape out all the potato mix it with the filling of your choice then put them back in the oven in an oven proof dish and bake for about 25 minutes on 180 c or until they’re brown and crispy on top.

Suggested fillings:

Cheese, with or without onion, sprinkled with chives or chilli
Tuna or salmon mixed with a little cheese
Bacon and cheese
